NorthSide was our first proper festival. We didn't really know what to expect — whether a plant-based burger built around our BBQ and Thai fillings would land with a festival crowd, or whether people would walk past looking for something more familiar.
They didn't walk past. We sold out. And the bit we'll never forget is the number of people who came back on day two and brought friends with them — that's the moment you know the food is actually working, not just the novelty.
